- Put the tea in the teapot (about 2.5 g for 15 cl of water) and let it release its scent in the steam of the announcement water.
- Put water to heat, but without boiling it, then pour it into the teapot.
- Leave to infuse (no more than 5 min), without touching. Remove the announcement water from the cups, and you can then serve it.
Regarding the infusion time, this varies according to the varieties:
- Dark black: 5 to 7 minutes
- Black spring harvest (first flush): 2 to 2’30 minutes
- Black summer harvest (second flush): 3 minutes
- Black autumn harvest (third flush): 4 minutes
- Full-leaf black: 3 to 5 minutes
- Black with broken leaves: 3 to 4 minutes
- Black with crushed leaves: 2 to 3 minutes
- Flavored: 3 to 5 minutes
Tea should never be boiled, which is not suitable for the qualities of this delicious drink. A temperature of 80-95°C is perfect.
Do not brew more than 5 min. It will become bitter! Similarly, let infuse at least 2 min so that it has a minimum of taste!
Purists prepare each kind of tea in a unique teapot so as not to mix the flavors. If you go to a purist, be careful not to take a rooibos teapot to prepare black tea!
Likewise, you do not clean a teapot, except by rinsing it with clear water. If the interior takes on the color of the tea, it’s not dirty, it’s that your teapot is “cheeky” (and that’s an excellent thing!)!
